TBB – Swedish Apricot Walnut Bread

As a home baker, I think we all get comfortable with our baking, collecting those recipes that speak to your own flavor profiles and those of our family. Like a nice comfy blanket, no matter what, when you wrap yourself in it, you are safe.

I think one of the reasons that I joined a bake along in the first place was to expand on those comfortable recipes. I wanted to develop my flavor profiles and also my baking techniques. I wanted to feel afraid and experience those hit and misses. I truly believe that we learn the most with our failures rather than our successes.

GCC: Greek Yogurt Cake

They say that the simple things in life are the most extraordinary. Its true, we take it for granted. Humans are the ones that complicated things.

In this case, this recipe cannot be overthought, or over complicated. It is what it is.

A fast batter to put together with simple ingredients that I bet, are sitting in your pantry/refrigerator right now. And the end results is a great snacking cake.

And I’m not taking about twinkies here.

HCB: Many-Splendored Quick Bread

See the title up there?

The key word is “quick”.

This bread is super quick, as in get everything ready and then, boom, before you know it it’s in the oven and driving you crazy with heavenly smells.

At least that is what happen when I decided to make it this past Friday.

Yep, you read it right, this past FRIDAY. As in, after a long day at work, I got to baking. Can you tell I had a hard week?

Because I totally did.

Very hard week, in total need of full therapeutic intervention.

So I got home and knew that if I did not turn on the oven and got busy, I was going to have a meltdown.

Baking, my anti-drug.

And this was the perfect prescription.
