TBB - Gingersnaps
I think all the Alpha bakers gave a little prayer when Marie posted the next baking assignment and flagged it with the “Q&E”(quick and easy) stamp.
After the Golden Panettone, I think we were all looking for some breathing room.
So this week it was a cookie recipe.
Got to be honest here, I have been trying to bake these cookies since last Monday. Some of the other bakers started to trickle their baking success in our FB page, and rave about how really quick and easy they were and gushing on how they tasted.
With all that advertising, I decided to jump right in and make them at the begining of the week.
Which became somewhat of a challenge.
I have a confession to make.
I love baking, I love cooking, but at the core of me, I’m a procrastinator, I have a bitty itty habit of waiting to the last minute to get something done, specially if its not an “urgent” thing to do.
But all that praised called out to me, and last Sunday, I told myself, I will get them done on Monday!
Then, I will get them done on Tuesday!
Then, I will get them done on Wednesday!
*Cough*, you guys see the pattern emerging right?
Epic fail - the schedule, not the cookies.
Turned out that Saturday was the magic day for these - and it had nothing to do with our posting deadline either.

My fellow bakers were right, these were quick and easy. In less than one hour, they were mixed, refrigerated, formed, baked and in the hands of everyone in Casa P for a taste.
Which started an eating contest, resulting in polishing off half of the batch in less than 10 minutes flat.
My husband and stepson take cookies (and eating them) very seriously around these parts.
My thoughts? They were good and I did eat more than one or two.
Amazing? Not so much, but then in fairness, I just never been a gingersnaps fan.
Give me a chocolate chip anytime; Gingersnaps not so much.
They are usually too sweet, too ginger-y, too crispy, too wrong. I just could never really get onboard with them.
But, these were none of that - the flavors were delicate, and with enough ginger, enough crispy, and plenty of chewy texture for me to rethink my position on the Gingersnaps.
So, to say that this recipe sort of turned thing around is a BIG step for me.
Was a converted? Not quite, but at least I can eat them and not just ignore them as before.
According to my husband, you grap a cold glass of milk and dunk away.
