Caramel Glazed Spice Apple Walnut Bread

In about 48 hours, Tom and I will be flying over the east coast on our way to meet up with our friends in NYC, to then pile up in a car and drive 2 hours north towards the Catskill region.

We have rented a farmhouse.

In the middle of nowhere!

We have all the Thanksgiving ingredients bought and menu printed and planned.

The goal of the trip is to connect with friends, give thanks over and over again for everything we have and eat huge amounts of food until we cry uncle. In between all this I can guarantee there will be lost of laughs, catch ups stories and in between lots of naps, reading, hikes and the opportunity to lose ourselves in the perfect environment to catch our breath before we get back to our lives the following week.

Because, December is knocking on our doors and its looking like a doozy.

HCB: Apple Upside-Down Cake

And I’m back baking from Rose’s Heavenly Cakes.  We are in the last stretch, and the last couple of weeks nothing in the line up has made me run to the kitchen to bake, making my HBC participation the last thing on my to do list the last couple of months.

I blame it on the fact that everyone is feeling the inferno that the weather god is sending our way this summer with those 100+ temperatures.  Who in their right mind want’s to turn the oven on when it’s like a gazillion degrees outside?

But, this week was free choice and I wanted to bake – because well, I’m crazy!  I have a love-hate relationship with the “free choice” options.  In one end, I love it because I get to choose what I’m going to bake, in the other; I hate it because I get to choose what I’m going to bake.  I dislike having so many choices – give me 3 and I can make a decision, give me over 3 and I become this indecisive puddle of doubt.   I ended up having to call Tom and ask him to narrow it down.

Quick Apple Galette

The thing with fruit desserts?  Having fruit left over because most of the recipes call for medium apples, but my supermarket does not know the difference between size, they are all big.

So I got leftover.

I hate to throw food away.

Even fruit.

And trust me I been so tempted of late.  I’m pretty over anything that has to do with apples.

But, I cannot do it – yes, call me wimpy.

So, here I was thinking, what to do with all of this left over apples, that I did not use in the future mother in law birthday cake a couple of weeks back.

And as I was thinking there, I started to crave a cookie.

Stay with me, there is a relationship in here.

So, I look over at Tom and asked him to pass me the pack of Galleta Maria, [Marie biscuit] for me to munch on.  And as I was looking at the package the name “galleta”, which means biscuit in Spanish made me think of the French “galettes”
