Beef Involtini - Slow Braised Meat Rolls

For the past 11 days I have been fighting a cold.  I experience every single symptom that every cold medicine list on their packaging. I don’t think I ever had a cold hit me this hard or overstayed it’s welcome - EVER!.  I had been, simply put – MISERABLE. And like anyone, when you are sick, the last thing you want to do is cook or be around food - at least that is the case with me. On top of all that I’m in the middle of interviewing for a new job, which has taken over my mental state.  

Tomorrow I will be going in for my third interview with this company and I’m about to crack – No joke. To have something that you want so very bad right there for you to take, but still beyond your reach, because other people are making the final decision - well, it’s sucks the big one.  I can honestly say that I comprehend what Top Chef contestant go thru doing everything in the power to reach their dream and still not have full control of the final outcome.

So, I know that I have neglected Sweetbites this past week.  But, hopefully this weekend I will be back in full swing and cook up a storm, and then you all be sending me emails to stop posting so much.  Just you watch.

But what I do have is a recipe that I made over a month ago, and just remember that it has been sitting on my DRAFT box all this time.

Chicken Surprise

I have been busy. Very, very busy. 

I have not used my stove, oven or any kitchen stuff in five days.

I miss cooking.

Instead I’m packing and unpacking.

Did I evern mention how much I love travel, but hate packing?

But, tonight I will be packing again, this time I take off to the seas.  For the next 4 days I will on this ship.

It will be me and the best friend, and usually we party it up when we get together - Some mayhem is sure to occur.

Along with large amount of eating, drinking and reading.

My kindle is going too.

In the meantime, I totally forgot that I had this and had not share it with you.

Dulce de Leche Stacked Cake

Argentineans have a fantastic story about the origins of dulce de leche.  They claim that in a war, in their country, in the early nineteenth century, on a winter afternoon, General Lavalle and General Manuel de Rosas came together in order to make a treaty. The General Lavalle arrived very tired at the camp of General Manuel de Rosas. Manuel de Rosas wasn’t in the camp at the moment so General Lavalle entered into his tent and took a nap.

While the General Lavalle was napping a serving woman was preparing “la lechada” for the camp. “La lechada” is prepared by heating sugar and milk. The woman went to speak with the General Manuel de Rosas in his tent, but when she entered she discovered the enemy. She didn’t know about the treaty the two generals were about to make, so she ran to find soldiers.

The General Manuel de Rosas arrived moments before the soldiers, and stopped them from waking the sleeping General Lavalle. In the chaos, the woman forgot about “la lechada.”

When she remembered and checked on “la lechada,” she noticed that it had become a dark brown jelly substance. It is said that a very brave and hungry soldier tried the jelly and then dulce de leche was born. 

It’s a great story, but others claim that it dulce de leche most likely originated with the French “confiture de lait”, a confections very similar to dulce de leche that was created - coincidentally? - in the fourteenth century in a similar military culinary accident.
